Here in the Rio Grande Valley of Deep South Texas the sweet variety grown is known as the 1015 or Texas Sweet, developed at Texas A & M University. It's kind of a big deal in Texas.
I mainly use yellow onions for general purposes, but will sometimes use white ones if they look better or are significantly cheaper. We go through lots if onions!

The specific variety has a LOT to do with it. Sweet onions have low sulfur content, and some varieties are simply genetically disposed to that characteristic. If you plant a typical yellow onion variety in Vidalia, you'll still get a sharp taste.
But combine a sweet variety with ideal soil and ideal growing conditions and you'll get maximum sweetness... onions that one can eat like an apple.
