Strawberry Topping

1 pint strawberries, cleaned and stemmed
1/3 cup white sugar
1 teaspoon vanilla

Cut about 1/3 of the strawberries in half. In a saucepan over medium high heat, combine strawberries, sugar and vanilla. Cook, stirring occasionally, until sauce thickens, about 5 minutes. Remove from heat. In a blender, puree about 1/3 of sauce, then mix back into remainder. Store in refrigerator.


Blueberry Sauce

1/2 cup sugar
1 tablespoon cornstarch
1/3 cup water
2 cups fresh or frozen blueberries

In a 2-qt. saucepan, combine sugar and cornstarch; gradually stir in water. Add blueberries; bring to a boil over medium heat, stirring constantly. Boil for 1 minute, stirring occasionally. Serve warm or cold over French toast, pancakes or waffles.

Gotta go with the classic: butter, maple syrup, sausage. If there's fruit it's blueberries in the pancakes, not on 'em.

Any fruit compote, I would imagine. I get cornflour pancakes at a local restaurant that are spread with strawberry rhubarb jam.

Sometimes when I make pancakes at home, I will put in some bacon crumbles, then do the butter and syrup thing.

Chop up some bananas and pecans and put them in the batter maybe.

I've also heard putting an egg in the batter can make them fluffier

I heat up our homemade maple syrup with butter and a special cinnamon taht I get from a friend. When it is heated, I stir to mix. The cinnamon gives it a real zing.

Heat blueberries mixed with a bit of honey. YUM and adds actual fruit to your meal.

Lemon curd, ricotta cheese, or put a fried egg on top of it. Personally, I just take mine with butter and maple syrup.

Eve...there's not really a recipe. You just make small pancakes (crepes) and top them with a slice of smoked salmon, a dollop of sour cream, and a bit of caviar. Dill for garnish.
It doesn't even have to be expensive caviar....you can use inexpensive salmon or lumpfish roe.
It's how Russians eat blini, and especially popular for Lent.

I went home and made English Pancakes for dinner one night because of this thread.
Have tons of huckleberries in the freezer. Will have to whip up some huckleberry pancakes for hubby soon.
