Do you put the meat and veg on the same skewer? I find that when I do that the meat cooks too quickly for the vegies to be fully cooked - especially when the meat is beef (which we like rare).

The vegies I usually use are onion, mushrooms, green and/or red peppers, and grape tomatoes.

yes, i put them on the same skewer,,,and i dont overcook my me...
i dont mind the veggies a little crunchy..

i soak the wooden skewers in apple juice so they dont burn up(if you use wooden skewers)

I put my veggies on different skewers than the meats. That way I can control the cooking and I can add a different flavoring to the veggies than what's on the meats. I do add onions to the meat skewers for added flavor.

Different skewers. I usually make kebabs with lamb.
