My wife is headed out on a business trip next week and I get to be single dad for the week. No bachin for me. Anyway, does anyone have recommendations of what I can make this weekend and put in the freezer? I have two young finicky eaters. It's COLD here so food that will warm them up...and me too would be good. On that weather note we're suppposed to go to -10 tonight! Guess I could store my freezer food in the garage and it would be good all week!

Hi Hoosier-Know what you mean about storing in garage-done that many times! How about a big pot of spaghetti sauce, meatballs and sausage. One night pasta, another meatball subs, next sausage subs or w/pasta. Or homemade mac n cheese, chili. Kids love good old grilled cheese and tomato soup (me too-comfort food). Spoil them with junk food-it's only a few days.

Do you have a crockpot? If so, dump some veggies, beef, potatoes, and herbs in there and let 'er roast for 5-8 hours. You'll have delicious beef stew for about 1-2 days that can be heated up in the microwave

Do the finicky eaters like lasagne? I would make a double batch because it freezes and heats up well in the oven, and tastes better each time you reheat it. You could also do one meat lasagne and one veggie. For the veggie one, I skip the tomato sauce and use a nice white sauce mixed with mozzarella and parmiggiano reggiano.

Another option would be a big batch of homemade chili made with either cubed or ground beef, kidney beans, black beans, etc. It is versatile - you could use some of it to make nachos, chili-cheese fries, even sloppy joes. A slow cooker is great for this but can be done stove top as well. Stick-to-your-ribs for the cold on this one as well as the lasagne.

Most kids love goulash----the real simple kind! Hamburger, whole canned tomatoes and some macaroni noodles. Next day is even better!! One of my kids favorites!! And it freezes up great!

When my kids were little they loved "breakfast for dinner"....still do:-) Maybe french toast or pancakes one night. Pigs-in-a-blanket.....wrap a hot dog in a torilla with a little cheese. Homemade baked mac and cheese.....heats up great in the micro. Chili and cornbread is easy and warm!!!

Good luck and as another poster said....have fun with it and them....let'um splurge a little:-)

OK, here goes

Mashed potatoes on hot dogs!!
Mom made them for me as a kid, and my kids LOVE them!
Boil some hot dogs (or microwave them).
Slice lengthwise and spread on some mustard (if they like it)
Top with cooked, instant mashed potatoes.
Then sprinkle on some grated cheese or even sliced American cheese.
Pop in the toaster oven or even the microwave just to melt the cheese.

Wonderful, delicious, definitely a kid pleaser and EASY

This should freeze:
PIZZA CASSEROLE
1 1/2 lbs hamburger
1 onion, chopped
1 green pepper, chopped
1/4 tsp pepper
32 oz jar spaghetti sauce
Dash of garlic powder
3/4 tsp salt
1 tsp oregano
1 TBL parsley flakes
8 oz spaghetti, broken & cooked
3 cups shredded Mozzarella

Brown meat with onion & green pepper; drain. Add remaining ingredients, except noodles & cheese & simmer 10 minutes. Add cooked spaghetti. Pour 1/2 of the mixutre into a baking dish. Top with 1 1/2 cups cheese. Pour remaining mixture over cheese & top with remaining 1 1/2 cups cheese. Bake in a preheated 375° oven for 30 minutes.
