I've never tried raw beets, but I love pickled beets and roasted beets.

I love beets but have never had them raw. A salad is not a salad without beets.
I plan on growing some in the garden this summer so I'll try them raw. Should be interesting.

Growing up, the only way I was ever offered beets was boiled. To me, boiled beets smell bad and taste even worse. However, after I was introduced to roasted beets, I buy them as a special treat. I like putting just a tad of coconut oil on them and sea salt of course I think they're "pretty food" too with their intense oranges and reds.

are you sure those are raw? Raw beets are usually not that dark in color and are very, very, hard. I can't imagine how anyone could eat them. those look more to me like pickled beets.

ok, forget my earlier comment then. Yes, that is what they looked like to me. and I do absolutely love them, anyway; salads, plain, heated, or just out of the jar. I usually pickle or marinate several jars during beet season.

The earthy taste beet juice gives mixed juice was not one I particularly liked the first time I tried it. Oddly enough, though, I actually started craving it sometimes after that first time. They say your body craves what it needs so there may be some mineral or some other micronutrient I don't get enough of in beets.
