We're having a July 4th Potluck at work on the Wednesday prior. We have a sign up sheet and there are a couple of us that are hanging back on signing up so we can see what will be needed. What dishes make for a great potluck indoors at work for Independence Day celebration?

I've made a nice chicken salad with chicken that's been marinated & cooked as a middle-eastern spiced shish kebab before chopping up. I used toasted pine nuts in it, chopped cucumber instead of celery and plumped up golden raisins and a yogurt based dressing.

Deviled Eggs are always popular/very quick to go, so if you want something easier that'll be crowd-pleasing (and economical) you can't go wrong. Another basic All-American fave is the BLT. You can make little sliders using dinner rolls and offer up the mayo on the side for food safety reasons. Just make sure you get the best, ripest Tomatoes you can find and I use Butter Lettuce as well which has a nice texture.

Grilled potato salad with some type of vinegrette instead on mayo dressing.

Toss in some grilled sausage for some extra flavor and wow factor.

I was going to suggest potato salad with a vinaigrette and chopped basil, dill, tarragon, parsley, and scallions. But "grilled" makes it sound even better.
