Hey guys. I have some skirt steak I'd like to grill tonight. However, in the past I made it covered in olive oil and garlic powder-tasted ok. I've also marinated it in stubbs-tasted ok. It always seems soooo tough and not all that exciting. Any suggestions for dinner tonight?? TIA

Fajitas!
This (link) is a 100+ year old outfit. Their spices can be found at WalMarts throughout Texas and maybe elsewhere. These will give you the best fajitas possible. IMO.

You must use a spice with tenderizer for best results... the spices I linked have tenderizer. Lime juice helps with flavor and breaking down the meat. Above all else it must be sliced (after cooking) in the correct manner. Across the grain so to speak. Otherwise it will be tougher than a boot.




Kids plate. We put ours in flour tortillas.


Guacamole and pico de gallo...

I have fajitas seasoning but it's old el paso and for chicken. We had tacos last night so didn't want to repeat the Mexican theme although I will pick some of that stuff up and have it over the weekend!

Well then just season as you like, use a tenderizer, cook as you wish and cut it properly when done.


Add baked potato or sweet potato, asparagus or green beans etc..

Most "powder" tenderizers contain salt. If you do use it omit the salt. Even if you use an "unseasoned" tenderizer it still contains salt. You can try some lime juice instead for a few hours. That will break it down for you.

I tried skirt steak recently for the first time, I like all my meats except boneless chicken without marinade..I just put some salt and pepper on mine, did a quick flash fry in a heavy skillet and cut on a 45 degree angle.. It was pleasantly tender..

It was wonderful, for a pan fried steak... I always grill steak... I got rained out... It had a great sear it was nice and red inside... The beef flavor was out of this world, almost made me rethink my choice of Rib eye as my goto choice..
Next time I get a good deal on skirt steak (it's not a cheap cut here) I'm going to grill them...

I would do a stir fry in the wok, put it in the slow cooker and use it like roast, toss it in vegetable soup cut into small chunks or do fajitas with onion and green pepper stir in the cast iron.
