I mostly don't feel like cooking on the days when my husband has night time classes. Those days, I usually make a sandwich with a side of veggies, cereal, or lean cuisine meals with a side of veggies. when I cook though, I try to make enough so that there are leftovers the next day.

If it is just me, I will prepare angel hair with spinach and sautéed in olive oil and garlic. I keep a frozen black and white milkshake in the freezer and have a few spoonfuls for dessert.

If DH is home and I don't feel like cooking, we order out, either Cajun or Italian, and have it delivered.

A can of campbell's ready to eat soup, plus a PBJ or cold cut sandwich.

Banana or other fruit with peanut butter.
