Garlic is an OUTSTANDING number one. I put it on basically everything.

I wouldn't consider garlic to be in the "herbs and spices" category, personally. I put minced garlic in pretty much everything--just like chopped onions. If it has to go on the list it would be #1. Likewise, I'm not counting cayenne pepper since I can just use fresh peppers.

I think I'll go with:
-cilantro
-thyme
-rosemary

cumin and ginger have to be near the top of my list as well; after the top tier anyway.

Naming only three is nearly impossible. They aren't the ones I use most often but I'm very fond of basil, cardamom and cinnamon.

No, wait! Tarragon, dill and fennel.
