bbq from restaurants are not that good anymore, meat tough, covered in some time of sweet tomato base sauce. I like my meat to fall off the bone, so tender you can cut with spoon

Properly cooked bbq should not fall off the bone. It should easily pull off the bone.

At least honorable mention to Pope's Barn in Dunn, North Carolina. Serving the clear, vinegar based NC style of BBQ sauce.

Several places in Kansas City, including one that is essentially an old gas station.

The "Dry Ribs" place in Memphis.

Believe it or not, several good joints here in Tri-City area of Eastern WA - Dickey's, Shrub Steppe, more that I can't remember.

I live in KC. I'm not a fan of Bryant's. My favorites are Jack Stack and Q39, with an honorable mention to Joe's KC. Jack Stack was actually my favorite but I think now it's Q39. Ribs so tender and good even without sauce, and great brisket and burnt ends too.
