I'm just having a look at a bag of cinnamon bark that I kind of left open for some time. Now that I really look at it, I notice little white and black spots here and there on all of the pieces, but I can't remember if that's normal or not because I've never really just stared at cinnamon before.
They seem like they wouldn't really go bad with age and air exposure, but I'm not so sure now. What do you think?
Cinnamon naturally is speckled, so the small difference in color variation is to be expected. Cinnamon, UNGROUNDED, typically lasts for 2-5 years if its kept in a dry, cool place. Best to make sure its air sealed tightly. I would use some.. try it and see how it is. May taste a bit stale but won't hurt you.
