It was really good. Normally I use a larding needle to thread some lard through it, but I was too tired- so necessity is the mother of invention I guess!
So I browned it in the cast iron dutch oven with a TBSP lard and some olive oil, then cooked it at 350 with a cup of good, strong beef broth.
The drippings had a hint of the Montreal seasoning which actually made a very impressive gravy. My son is the worlds harshest gravy critic and he gave it a 4 out of 5 stars.
Cooking a beer can pheasant. But I can't use a beer can, cause a pheasant thighs are too narrow.... So I guzzled a narrow Starbucks energy 'whatever' and filled it with some nice brown ale!
We'll see how it turns out. Another 10 minutes on low on the grill, then 15 minutes resting time...
Simple rub, Olive oil, sea salt, pepper, thyme.
Well- it was good! Very moist and tasty. Will do this again..

Good quick recipe to sprinkle over the bird before roasting:
1 TB garlic powder
1 TB onion powder
2 TB caraway seeds
And a quick 'n' easy dressing recipe:
3 cups dried diced bread
1 and 1/2 cups diced onions
1 TB poultry seasoning
salt and pepper to taste
..... I had rabbit as a kid, when my mother got curious and decided to do a stew with one she got from a friend. The sulphur-like smell was a bit much. Anyone here cook with rabbit?
My friends hunt boar in Georgia, USA every year- it is a very lean and flavorful meat.
It is so so good. I need to get some more of it next time I have a chance.
My kid had game meatballs (don't know exactly what game meat was in it but probably elk) for dinner today at a restaurant but didn't appreciate them. I appreciated the hell out of a slow cooked duck leg though!

When I was a kid we raised rabbits. We had fried rabbit and roasted rabbit, but never rabbit stew. Our rabbits never had a bad odor.
We started with two Checkered Giant does and one buck. Then we started selling dressed rabbits to the meat market. When we finally gave it up, we had 142 rabbits!
We pretty much lived on venison and rabbit back then.
