Beef back ribs tonight. I am going to salt and pepper them, wrap tightly in foil and throw in the oven at 275° for sixish hours. I will serve with an avocado, black bean and corn salad.

With the mention of prosciutto, I'm thinking saltimbocca with a simple pasta side dish and sautéed zucchini/yellow squash with herbs. Fresh crusty bread and an oil dipping sauce.

Great! I just can't get dessert right. It stymies me! (I just love the word stymie)

My kindle won't let me leave rep messages. So if you try this just remember to flip the foil package every hour or so. I will admit sometimes I totally forget to and I really couldn't tell any difference.

Hahaha! It *is* a great word.

Thanks for the tip! Do you totally forget every hour or just some hours? I'm asking because if I totally forget -- which is totally possible; verging on totally probable -- I want to know if I *need* to flip it at least some of the time, in which case I'll set an alarm. (Which I'll then think is a smoke alarm and will result in a funny and embarrassing story that I'll share with you here because there's no better humor than the self-deprecating kind.)

I will wait, with bated breath, for the alarm story.

I have never forgotten for the whole six hours but I have forgotten for 2-3 hours. Set the timer, huh? Whoops! I guess I am not the brightest bulb!
