I had WW loaded potato soup and a half of turkey and Swiss on berry wheat bread.

I am making a big pot of chickpeas curry soup,on the thicker side and with it chapatis,cucumber raita,lassi/water and for dessert a little marzipan heart and a cup of Darjeeling tea

Last night I whipped up what turned out to be a great dinner.

I cut up green and red bell and a jalapeno pepper, celery, green cabbage, yellow onion.

I cut up some uncured (??), boneless, petite sliced ham (Wegmans). I also cooked up some jasmine rice.

Steamed the veggies a bit (too much), about 5 minutes, then dropped them into a heated pan with some canola oil. and did a little stir-fry action, then added the ham and S-Fed a bit more. at the end I added a bit of Kikkoman Citrus Seasoned Ponzu sauce (its like light soy sauce with more flavor).

Oh yea, also roasted butternut squash chunks on a baking pan.

Wasn't sure how it would turn out, but WOW it was great. Wife and I ate it up.

Inspired by Elnina's dinner, I am going to make chipotle grilled shrimp quesadillas with fresh guaca and salsa.

Breakfast for dinner tonight. Making pancakes, maple sausage and fruit salad. Orange juice to drink.

Glad you mentioned this. Never hear of it but it sounds yummy. I'll look for it at the grocery store.

I got hungry for old-fashioned coarse ground ring bologna (with ketchup on it, for crying out loud) and went on a mission to find some home-made. I'll fry some leftover skin-on boiled potatoes with a little onion. Call them Lyonnaise and they won't sound so fattening.

Then I want to experiment with two heads of cauliflower I got on sale. For over a year I've been seeing recipes for "cauliflower steaks" and am going to search on line and see what I come up with.

If anyone here has a good recipe I'm open to suggestions.
