Tofu/vegetable/pork stir-fry served with Jasmine rice.

I used the tofu that I had frozen and a thin-cut pork chop that had to be used before it went bad. Lots of fresh vegetables: broccoli, carrots, celery, sugar peas, bok chop, onions (sweet and green), ginger, Serrano pepper and garlic. It was delicious and I have enough left over for another meal.

I'm working a banquet this evening at the high school cafeteria where I'm employed, so we (the staff) will dine on leftovers before leaving...roast beef, chicken, stuffed shells, meatballs salad, etc. Topped off with whatever desserts are left over (lemon meringue pie, I hope). On top of getting paid extra for working these events, they feed us well!!!

The big game (Ravens vs. Pats) is going to be during our normal dinner time. This means very easy dinners tonight. I will make the kids a bowl of udon noodles and a chunky salad of onions, cucumbers, carrots and celery. Probably tuna melts, chips and a couple beers for the husband and I.

A lot to celebrate tonight ! Therefore smoked salmon on toasted bagel with creme cheese, capers, onion rings and a bottle of Champagne and for dessert a Hazelnut Torte with coffee icing in the middle and on top whipping cream and a cup of black coffee

Hazelnut Torte ! (a blender recipe)
4 eggs
3/4 cup sugar (but I take less)
2 Tbsp flour
2 1/2 tsp baking powder
1 cup Hazelnuts( grind them )

for Mocha filling you need:
2 Tbsp butter
1 cup icing sugar
2 tbsp extra strong hot coffee
1 tsp cocoa
1 tsp vanilla extract
1 cup whipping cream

In a blender mix eggs and sugar well, add flour, baking powder, and Hazelnuts. Blend at high speed and pour in 2 greased spring forms and bake at 350 F for about 20 minutes. For the filling cream together butter and icing sugar ,add coffee, cocoa and vanilla extract. When cake cooled spread filling between layers and add whipping cream on top of the cake and to decorate add some shaved chocolate pieces. Delicious !!!
