I had tons of zucchini to use up so I was torn between a moussaka, curry or quesadillas. I went with quesadillas. Edited to add: I changed my mind when I saw I had shrimp in the freezer. I am making zucchini and shrimp enchiladas with salsa verde cream sauce.

We are having company so I'm making pear/proscuitto/gorganzola pizza, shrimp scampi pizza, alfredo pizza, pepperoni pizza, salad, strawberry cream puffs.

Tonight it's roast chicken from Safeway. I prefer COSTCO because they're larger but the Safeway birds still have good flavor. For five bucks, you cant beat them. Eating it with avocados and cantaloupe (separately ).

Costco salmon patties grilled in cast iron dutch oven with steamed organic mixed veggies and broccoli. All sprinkled in Old Bay seasoning and melted butter.

Small cup of organic yobaby strawberry and banana yogurt for dessert.

Bought a bone in ham shank on the cheap last week and threw it in the oven early this morning.

Dear mom took care of the rest, glazing it and came home to the ham, some baked potatoes and steamed green beans. Will carve it soon and bag most of the meat and freeze for future
breakfast's..Ham and eggs!

Dinner tonight was a huge BLT salad and I added pineapple, grapes, pecans, olives, beets, red onion, cucumbers, spinach and topped it off with homemade yum yum sauce. Unsweetened iced tea to drink.
