We do have some Mexican food left from lunch and I guess I will make a small salad with a little left over Salmon to go with it: strange conbination I know, but at least I am not letting anything go to waste.

Left overs from last night's dinner at Texas Roadhouse. For some reason I thought the chicken and rib combo was a 1/4 chicken. Nope, it's a BIG 1/2 chicken, which I barely touched. The rolls and appetizer got me.

Spicy baked tilapia, baked sweet potato fries, fresh green beans, and a buttered baguette. Unsweetened iced tea to drink. Cherry pie for dessert.

Ugh! Drove 8+ hours to Northern (if I look out the window I see Canada) Maine with two kids. I just wanted a simple, easy dinner. Ordered pizza and subs. My Italian sub consisted of cheap ham and American cheese. My hot peppers where pickled jalapenos. Sigh...I'll just steal the kids popcorn instead.
Hopefully a better dinner tomorrow!

I grabbed an Italian sub for dinner as i don't feel like cooking anything. I'm on vacation from tonight and all of next week.
Going to Kennebunkport maine next thursday till monday and will enjoy every minute with my sis and her recently bought farm. I cherish the time to spend with her and Maine in general. The place was built in the 1800's and my advice on renovation i look forward to, besides some good seafood, good people, and just a break from work! Happy dinner all.
