Watching football and NASCAR - so we raided the Jewel's deli this morning. I'm having a sub (salami, pepperoni, mozzarella, with onion, green peppers, black olives and pickles with red wine vinegar) and husband is making a Reuben. I'm a tad frightened though - he's going to use the oven.
DH cooked dinner today - good thing, because I'm still recovering from yesterday - and so we had roasted marinated chicken thighs and green beans. He done good!
We aren't having a conventional dinner tonight. We are having wine, beer, cheese, bread and fruit and a seasonal salad.
The cheese spread will include King Ludwig Beer cheese, Amerlander cheese, Norwegian Gjtost, Bavarian Blue cheese, a sharp crumbly local cheddar and a large wheel of brie.
Serving with plain baguettes, Carr's water crackers and miniature rye bread slices. with a Beet, Carrot, celery and fennel salad with a citrus dressing.
Fruit includes red grapes, sliced pears and apples.
Another couple will bring the wine and beer, and another the desert.
Very odd dinner for us tonight. I broiled hot dogs for DH and the dogs. Since I had been to the farmer's market earlier in the week, I had to get some things cooked. So I did some lima beans in chicken stock with onions, collard greens with cherry balsamic vinegar and seasonings, baked beans, buttered rice, and applesauce. Plenty left for tomorrow's dinner.
I am thinking about making a chocolate ganache glaze to put over pound cake with ice cream for dessert.
Shrimp scampi with capellini, green salad, fruit for dessert
