Pork al Latte with potatoes

Cut up your pork into chunks and season with salt and pepper. Then brown the pork in a little olive oil and bacon grease from a couple slices of chopped bacon and when the pork is browned, take it out and set it aside. Add a chopped onion to the pan and cook till translucent, then add some garlic and cook for a minute. Then add chicken broth and creme fraiche (I didn't have any creme fraiche, so I used heavy cream and a spoonful of sour cream) and season with sage. I also used some Italian seasoning and some extra basil. Add back the bacon pieces you fried up for the bacon grease. Bring everything to a simmer and add back the pork. Cover and simmer for almost an hour and then uncover and let the liquid reduce down to a gravy. Serve and enjoy.

My pork is simmering now and at about the 30 minute mark, I'm going to add some small potatoes. I've never made this before so I have no idea how it's going to taste, but it smells heavenly.

Prime rib roast with sauteed string beans and roasted fingerling potatoes. The roast was VERY tender and tasty!

Two days in a row, I made it yesterday for dinner with oven crusty bread. Haven't had this in years, absolutely deelish!

I may boil a couple potatoes and have those with butter and sour cream, some cottage cheese and sliced tomato.

a capon is a castrated rooster, because he wasn't chasing the hens, he ate more and got plump!!(just passing on to others)

30 years ago, we would have at least 20 special orders for them around Christmas, today only 1 or 2

Christmas Eve: hor'doeuvres. We are having shrimp cocktail, crab cakes, quiches, pigs in blankets, scallops wrapped in bacon, mozzarella sticks, roasted green beans, baked Brie and crackers. Wine, and for dessert, cream puffs, tiramisu, chocolate fudge layer cake. Happy eats kids and Merry Christmas!!!
