I was in an upscale bar and the cocktail had one large spherical piece of ice. I was told this is because it won't dilute the drink as much as little ice cubes and possibly other advantages. Is that basically what better bars do?
I also noticed the ice sphere stayed together for a really long time.

I was served one of these at someone's house. It looked lovely but the HUGE BALL OF ICE kept crashing into my teeth. Good thing that I don't really drink, because I was getting nothing out of the glass anyway.
The size of the ice definitely makes a difference, and the size of ice varies widely across different drinks. For example - you want to make sure to use crushed ice in a Julep because it will be too strong if you use cubes. You also want to stir a drink like a Manhattan since shaking it will add much more air and water than stirring (and will cool it down too much as well).
Old Town FFX's post describes the difference with large ice pretty well - in short a large piece of ice adds less water to the drink and lowers the temperature of the drink a bit less. That's not what you want with every drink, but it's one more tool you can use to get the results you want.
