So I bought some kohlrabi at the market yesterday and it came with all these leaves attached.
DId a quick search and see they are edible. But I also see I need to cook them for a bit to make them less bitter? But I get conflicating things on how long would that be....like Kale (once site)?....like Spinach" (another site).
So a query out to you C-D foodies. How long to cook (steam, sautee, etc) kohlrabi greens?
I do it the italian way...I first had in Little Italy, NYC.
Rinse and wet toss into wok type pan...place lid over after you salt to steam.
When half way...toss in garlic...don't burn it....drizzle with EVOO...serve.
Options...red pepper is common...some like black pepper.
Same with escarole, ...and I think broccoli rab is the same thing.
