Yes, but would throw them in a bowl to microwave on high for a minute or two just to kill off anything that might wanna kill me first.

Of course. I don't even wash my (organic) produce. I certainly don't freak out about a cooked veggie being out for a few hours.

This is probably one reason I've never gotten food poisoning (hangovers don't count) even when norovirus hits people around me.

Hunterseat---brilliant idea about the rosemary.

For those who don't like beets---have you ever had them roasted? Or pickled?

No. Three hours out of the fridge is my limit for this type of food.

It's fine. Just heat them back up to make sure any possible bacteria is gone and bon appetit! If it were milk, eggs, cheese, meat.. then no. Veggies are fine.

They'll be fine. They are vegetables.

I like them roasted or pickled or boiled.

Try it and see! Consider it a culinary adventure.
Yes they should be fine, but you may want to re-heat them anyways.

What exactly do you think is happening to cooked vegetables inside a closed oven in three hours?

People are strange. If they cook something and then let it sit out for a few hours they think it might be bad. But they leave bread, grain, fruit, dry vegetables and who knows what else sit out for weeks with nothing but a little paper or plastic over them and think nothing of it.
