It seems to me that in the last few years there has been a lot of hype about eating bacon. How did this start? A campaign by the pork industry? The use of bacon by some famous chefs? A backlash against being told to eat healthy? All three? Something else?

I don't think it was the pork people (porkboard.com, nppc)

I think its more the imagery of casual restaurants tv ads with bacon burgers and such,

also diners drive ins and dives and other cooking shows- show a lot of bacon

also,,

bacon is very tasty!

I don't think more people are eating more bacon today than 30 yrs ago

also,, it can be cheap, I saw bacon yesterday for 2.99 lb
it may not be the best brand bacon, but its still only 2.99lb for something many think is tasty

I don't think there's anything mysterious about it. Bacon is extremely flavorful, and most everyone finds it irresistible.

I think it started around 2002-04, when a lot of chefs started curing meat. This book came out in 2005, and bacon (and other cured meats) really started to take off and become a big thing with chefs and home cooks.

IIRC the first "Baconfest" type event I saw was in 2008, and it was started by regular people and some chefs (with no connection to the pork industry at all). It's been growing and spreading every year since then, and at this point has a lot of support from different industry groups.
