Not "melted," but room temperature. We set out all of our cheeses at 7:00 and figured they weren't fit to eat till around 9:00. Put them back in the cooler every night. Cold cheese has no flavor!

I LOVE MOST CHEESES.

If cheese was a healthy food that was ok to be eaten in large quantities, it would be my main food source.
The cholesterol, fat, salt and calories keep me in check from pigging out.

I find cheese is one of the hardest to cut back on when I'm trying to lose weight. I refuse to eliminate it altogether though. Can't live without it.

It's not that unhealthy in small amounts. It sticks to the ribs, making you feel more satisfied for longer, so that you're not gorging on flatulent veggies every three hours.

It's funny because, as a kid, I only liked my cheese cold. Of course it had no taste but I was a kid -- I didn't know any better. Now I do. In fact, when I want to have a soft cheese (Le Rustique or Caprice des Dieux are two of my favorites) for breakfast, I'll take it out of the fridge before I go to sleep and leave it on the counter until morning. Yum!

Only, unless I'm eating deli cheese clearly meant to go on bread. Good cheese (the $20-$30/lb stuff) is not for bread.

I like to have a small piece of cheddar, pepperjack or colby jack sometimes. I usually like to have it with grapes (cliche, I know) or another piece of fruit.

One of my preferred cheeses is a white sharp cheddar, Tillamook! I use the regular Tillamook sharp cheddar for comparison to most other cheeses because it isn't overly priced and has tremendous flavor.
