It turned out all right!
I was going to do it in the crock pot but found there wasn't enough room once I put the veggies in (I have a small one because we are not big eaters around here). So I browned it in my tri-ply stainless steel Dutch oven, deglazed the pan with some chicken broth (made from Better Than Bouillon paste), added carrots, onions, and large potato wedges, put the lid on and simmered for 4 hours on the stove top. We just pulled chunks off to eat it.
I ended up having to take the potatoes out early so they wouldn't turn to mush, but otherwise things turned out fine. The taters and carrots were particularly tasty....even picky DD liked them....and the pork also!
I made some gravy with the liquid but it wasn't particularly good to me. Maybe because I'm just so used to beef gravy. DD drizzled it over her potatoes and meat, though, so that was good. She is SO hard to please.
That 4 lb. chunk of meat was only 4.99 (total!) and we still have some left even after shredding some for BBQ sandwiches the next day and I ate some again yesterday with some of the leftover taters and carrots.
So, it was a success and I have you all to thank for it.
In the future whenever I find one I'll look up this thread again and try some of the other ideas given.
