I would think that red potatoes and corn on the cob will already be in the roast.

How about a Caesar salad?

The only thing I've ever taken to an oyster roast is a garden glove and an oyster knife.

Wife makes a tasty vinegar-based slaw that goes over really well. She found a recipe online (southern style slaw..something like that) and modified it, reducing the sugar(replaced with agave) and adding fresh jalapeno and some other changes.
