My ex-wife used to make really good cinamon rolls from the base. I have used it as a component of the breading for fried fish/shrimp.

Bake in a round cake pan, then slice like a pie, and use as layers for strawberry shortcake.

Not sure if anyone remembers a place called, "Arthur Treacher's Fish and Chips" but the batter they used was basically pancake mix and club soda. That's how I still make mine. Delicious!

If you get the garlic and cheese flavor, it also makes a good crust for "deep-dish" pizza.

All you have to add is sauce, meat, and cheese. I think it's a great fast lunch.

Why not just make actual crepes? They are simple and you just don't need a watered down pancake mix.
