I plan on peeling on the skin, but after that, can I just eat the ginger?

Any grocery store sushi has raw ginger on the side.

sure, sometimes we put a very little in our salads, but OMG, to eat it raw and plain would not be my idea of a really yummy treat. I am guessing you don't mean just eat it, but are planning to put a little in something.

The ginger served with sushi is young ginger that is pickled in vinegar and sugar. It's not exactly like slicing off a piece of raw ginger and eating it.

Sure, but why put yourself through that? My parents make this pretty solid ginger drink using the vitamix. That's about as adventurous as I'd go.

Y'all are wimps!!

I eat about a 1/2-3/4" section of raw ginger every day. I don't mix it in anything...just peel it and pop it into my mouth. Once a week I buy a portion of ginger root and work my way through it during the week.

I like it. Yes, it's pungent, but in a good sort of way. Sometimes I will slice it up and eat each slice, other times I will just put the whole plug into my mouth and suck on it for a bit, and then chew.
