I just saw an episode of "Good Eats" where Alton dispels the myth of whether or not to wash your mushrooms. His final verdict is that they soak up very little liquid whether they are briefly washed or left to soak in water so therefore they it is advisable to wash them.

My grocery stores sells regular white button mushrooms at the same price and weight whether sliced or whole,i buy the sliced ones

I always buy whole mushrooms. I want to have a good look at them before I use them.

I do not like the way they are sliced. Either I need fine slices or quarters. So whole it is. The local WalMart carries produce from a farm a few miles down the road and price matches against Aldi specials. Today 2.98 versus .69. For some dishes frozen is fine with me.k

Even if they soak up "very little" it's still more than I want. When I'm sauteeing mushrooms, they already have a lot of moisture naturally. I don't want any additional moisture or they will just steam.

Simply wiping them hasn't been a problem for me, so I'm going to continue that practice. I do love Alton, but I don't mind disagreeing with him this time.

Sliced. Every motion saved is a plus. Also I never buy mushrooms more than a couple of days before using them.

Sliced -- when I making lasagna sauce. I use the whole package. It's just easier. I add them to the pot after the sausage has nicely browned, and cook them down to till they get a little browned... and then add the garlic. ( I don't use onions -- allergic) My sauce with out mushrooms doesn't taste as good... the mushrooms really add a nice flavor.

Other than that I buy whole and slice myself, because with two of us, I don't use a lot at a time.

I agree - whole are better. I can do with them what I want. The white buttons they sell in stores these days are simply delicious! I don't know what they did, but those old tasteless buttons from 30 years ago are history. Buttons these days are scrumptious. The problem is that these days I pop half of them in my mouth before they even get to the pan.
