This is something that I've always wondered about, but I assume most people who eat pizza with only veggie toppings are vegetarian (or just don't like meat on their pizzas).
I've tried veggie pizzas and I just can't stomach it. I do like cheese only pizza, which actually was an acquired thing for me.
If I were vegetarian, I'd eat cheese only pizzas.
So do any of you eat veggie topping only pizza (mushrooms, bell peppers, etc.)? Why not just cheese?
One of our local pizza spots makes a great veggie pizza with mushrooms, green peppers, onions, black and green olives, and tomato slices. I love it and am not vegetarian. Sometimes I don't want a meat based pizza and cheese alone doesn't cut it usually. The veggie pizza is a nice change.
Neither my SO or I are vegetarian, but we almost always get a vegetarian pizza. The pizza we normally get has spinach, black olives, green olives (we substitute kalamata olives), red onion, tomato, garlic and feta cheese. http://washu.spoonuniversity.com/wp-...014/02/ZZA.jpg
I also like broccoli, potatoes or artichokes on pizza.
Why not just cheese? Because we like vegetarian pizzas.

I'm not a vegetarian at all -- I hate a Flintstone-size slab of beef tenderloin for dinner last night -- but I almost always have either plain cheese pizza OR cheese with anchovies or olives OR cheese with mushrooms. I rarely have meat on my pizza. If there's pizza offered to me and it has meat, no problem -- I'll eat it AND enjoy it. But when I order or make my own pizza, it never has meat on it.

I normally have to have a touch of meat on my pizza - BUT you have to go to Upper Crust in Palm Springs. Fresh mushrooms (lots of 'em) and fresh peppers, delicious, melt-in-your-mouth onions, Mmmmm! Best of all, a crust that actually tastes like high end European bread (ever been to Europe?). That makes all the difference.
If you are going to eat pizza, EAT PIZZA for Pete sakes! Or just stay home.
My husband who is the farthest from being vegetarian has gotten veggie pizza and cheese pizza both before, he normally gets buffalo or bbq chicken pizza which are his favorites. He likes both though, sometimes just doesn't want meat I guess. I don't like either and never eat pizza.
