I wouldn't eat it just for that fact is been open for three weeks!! Buy new. Also you can freeze what you didn't use then you won't die from food poisoning either!

As long as it is in the fridge it should be fine. tomato based foods last quite a while. Think of things like bar b cue sause we open in early summer and do not finish until the end of summer. Or we do anyway. I usually make my own sause, so if I have a jar to open it doesn't get used very fast.
