Anyone did research or has scientific knowledge about this? Does mashed potatoes, or over-cooked bean soup (so that the beans are completely mashed like paste) have less fiber than not mashed ones?

You can't take the fiber away from beans by cooking the shape out of them. It's still there. Northern white beans have over 5 times the fiber than mashed Idaho potatoes.

I don't think anyone needs to do much research to know dried beans, regardless as to how long they have been cooking have more fiber than mashed potatoes.

Leave the peels on the potatoes when you mash them, and that will add fiber and nutrition.

You do have to be careful with potatoes though.

It is said that if the skin has been exposed to light for lengthy periods it will start to turn green (not a rotten green, just plant-green) and will contain more compounds that can be upsetting to the stomach.

You see, potatoes are part of the nightshade family blah blah I'm sure everyone has heard all this before.

Don't eat green skinned potatoes.

I agree with Fontucky: the fiber is still there, just mashed up. Your body has to break it down even further to digest it.

But there is still a ton more fiber in beans. There is no reason you can't make your potato soup with white beans as well, to add fiber.
