I have a neighbor whose son is in the hospital. I want to take over a few meals so she does not have to think of food when she comes home from sitting with him. What can I make that will be easy for her but can be frozen if not immediately needed?
If you have bisquick, go online and get some of their recipes that are quick and easy, our favorite is cheeseburger pie.
Those are put together fairly quickly and easily, can be frozen before or after cooked and go right into the oven for 30 minutes.

How old is the neighbor? Young, with a baby in the hospital? Or elderly with an adult in the hospital?
If young, I'd say something that can be heated up quickly, perhaps already separated into small servings, so she can rush right back and be with her child.
If elderly, she probably doesn't spend the night, so a casserole or lasagna would be good.

froglipz has some good ideas, also (which has probably been suggested) homemade soups work great. When I had me knee replaced about 6 months ago, friends broght mostly casseroles and soup. I always take soup and some good quality bread. A dessert is fine as well, but probably not needed.
