Black raspberry pie w/vanilla ice cream is one of my favorite desserts.....I'm jealous!!! Black raspberries don't grow down south and I grew up in New England where they grow wild. Picked buckets of wild black raspberries every summer.
If you have a bounty of them - freeze them. They make wonderful pies, cobblers, you can put them in pancakes, fruit breads, muffins, as well as adding them to smoothies or yogurt.
I love raspberries, especially black raspberries, so I've never had any leftover to make anything with! I just eat them all right away. (You could probably sell them if you have that large of a crop! The local Facebook yard sales near me sometimes have postings from people who have lots of tomatoes, zucchinis, etc. You could always try that if you really can't use them up.)
DH and I shovel the raspberries that we have growing in our yard into our gaping maws before we can decide what to do with them. We have the red variety of raspberries.
How about drizzling a few handfuls of those berries over a bowl of ice cream? *sigh*
I just picked about 2 quarts of wild black raspberries from vines in my backyard, and there are a bazillion more ready for picking. Any suggestions on how to use them, besides as garnish/toppings or mixed with? I don't have the time to make jam or preserves, so that's not a viable option. Do raspberries work well in a pie, or do they contain too much liquid for that? Do they freeze well?
I'd like to hear some ideas of what others have done with black raspberries. Thanks!
Mmmmmmmm, raspberries!
.
yum yum: how about some jam? We love berry jam of all kinds. I don't think I have ever heard of black raspberries. s
But what about all those blackberries in Eureka or at least there used to be. We would can them or make jam. They were everywhere.
Blackberries look similar to black raspberries, but IMO taste nothing like them. Blackberries, to me, are bland and watery and don't have that sweet-tart taste the black raspberries do. I wish they grew down south....I really miss them.
Raspberry jam is actually very easy to make. Equal measures of crushed berries and sugar, boil for 5-10 minutes until it gets to be a "jammy" consistency. You don't need to worry about sterilizing and sealing the jars if you just keep them in the refrigerator (they'll keep for months and the jam probably won't last that long unless you are making gallons of it).
Besides freezing the whole berries on a cookie sheet, you can mash them up with a little sugar and pack that into freezer containers. Makes a great topping for ice cream.
