I've seen pictures of sushi made with rice paper. I haven't tried it myself but it seems like it would work. You might have to brush some sort of liquid onto the paper to make it pliable. I'd definitely put a piece of press-and-seal wrap on the mat before trying to roll sushi with rice paper.

Okay, I shouldn't have said "never" because you never know these days! But the traditional wrapper for sushi is nori, not rice paper.

No, you're right, there are kinds that are just rice with toppings. Also, I forgot about inarizushi (one of my favorites)--rice enclosed in a pouch made of fried bean curd. It doesn't look like what most people think of as sushi. There is also a kind wrapped in cooked egg.

But, if sushi is rolled into a cylinder and cut in slices, it's almost always wrapped in nori. I have noticed that here in the US, sushi rolls often have the rice on the outside and the nori on the inside enclosing the filling. I think that's more of an American style.

It depends - I will occasionally have the raw seafood sushi but most times I prefer the protein cooked. Just last night, I had spicy shrimp. I had never tried it before - it was quite tasty.

So what exactly is a Firecracker roll? I'm guessing its spicy, but what is all the red stuff? I prefer either the salmon or tuna rolls, imitation crab is just BLECH

Sadly Sushi like many other ethnic foods have been "americanized" to death giving people the wrong idea of what true sushi is.
Take the California roll for example or Krab roll. Those don't exist in true sushi nor do many of the "popular" rolls at your local sushi bar. Do they grow Avocados in Japan?

I very much prefer the traditional sushi/sashimi as made in Japan. YUM!!!

A California Roll is sushi 101.

I eat most all sushi except for scallops and squid because it gets stuck between my teeth.

I love a spicy tuna roll!

Yellowfin is probably my favorite.

I don't like fish, especially not when it is raw, but I will eat a California roll with crab, avocado, pickled ginger wrapped in nori.

I'll eat rice, pickled ginger, and pickled carrot wrapped in nori.

I've never seen a sushi roll wrapped in it, but there is Japanese candy wrapped in special rice paper that just disolves when it gets wet. That Thai spring roll wrapper is clear. Like chewing bubble gum, but you can see through it. Maybe that's what the roll wrapped in rice paper is about.
