I'm allergic to vegetables.
OK, I'll eat corn on the cob and have salads, and I love tomatoes. When I had my garden, those were the ones I planted (along with strawberries and such) so I could free graze across my yard. But when it comes to cooking, the only thing I really cook for myself in any variety is potatoes.
Good nutrition? Heck no. But I eat a lot of fruits and like I said, I'm allergic to vegetables.

frozen broccoli florets are a staple and I eat a couple of family size bags a week. I also buy mushrooms every week. Avocados are a treat.
I eat seasonally from the farmers market. Winter squash and sweet potatoes are on the menu now.
I don't worry about nutrition because I like vegetables and eat a varied diet.

What I cook or use mostly are:
Bell peppers - cooked / raw
Celery - cooked / raw
Onions - cooked / raw
Carrots - cooked
Zucchini - cooked
Corn on the cob - cooked
Potatoes - cooked
Lettuce
Radishes
Canned - beets, peas, corn, tomatoes.

I force myself to each veggies,,,,not a veggie lover- tho I love fruit,,,ive been months where I haven't had a veggie at all
the top tolerated veggies are
corn on the cob,
tomatoes (close enough as a veggie, even if its a fruit) on a pizza
French cut green beans,
spinach, broccoli, i try to eat once every couple of weeks
the evil foods known as peas, beets, squash, turnips, cauliflower, I haven't consumed in over 32 yrs as an adult
unless hidden in mashed potato/gravy
oh, stuffed celery around the holidays.... is pretty good!!
fiddleheads in butter... i have to admit aren't that bad

Broccoli, Brussels sprouts, carrots, green beans, and make mostly, either fresh or frozen... I very much dislike canned vegetables..
Frozen spinach also...
Raw peas, I don't like cooked mushy peas of any type..
Right now seasonal, like rutabega, acorn squash, delacata squash, butternut squash, parsnips..
The squash thing is pretty new, I'm actually starting to enjoy them...
Still some things I want to try..
Chard, bok choy, celery root, calabasa squash, leeks...

First off... I love veggies. .. I'm also a seasonal veggie eater...
My go to staples are,
Tomatoes
Mushrooms
Bell peppers,
Onions,
Garlic,
Squash,
Nopoles,
Cabbage,
Brussel sprouts,
Any and all greens except Kale
I forage too,
Young dandelions,
Purslane,
Or anything I like which grows and I'm familiar with. .
Remember all in season or on sale.. Same with fruit.

I usually pig out on root veggies - onions, carrots, beets, turnips, sweet potatoes. I like those best, year 'round. Not big on salads; can't remember the last one I had. Fresh tomatoes are great, and sauce. I don't worry about nutrition. I'm obviously not undernourished!

Sweet and or yellow potatoes - sliced and brushed with olive oil and a little salt. Placed on the grill. Excellent!!
