Mmmm..... I love omelettes, Almra! But not in the cards for me tonight. I have a busy afternoon of shopping and doctors appointments. Lucky me! I will meet the husband and boys at Anthony's Coal Fire Pizza for dinner. It's my first visit there and they better have artichokes for my pizza!!
Let me preface with a bit of history and confession. My parents were of the depression era. I have too much food in my pantry and freezer as that is what I was 'taught' to have. My spouse has encouraged, beseeched, dared me (this one got me moving), to reduce use what we have. That said, last night we had Pierogies. I do not recall buying these. We are not Polish and have never had this before. I made a casserole and it was interesting. Sauted in butter, added onions, garlic, made a white sauce, seasoned it up then threw in fresh spinach. Baked with a little cheese on top.
This evening is a toss up between ground elk (no clue where that came from) or chicken tenders with a smidge of freeze burn.
My story similar to yours but I was actually born at the end of the depression so am older than you. My freezer is a nightmare. I am trying hard to use up old foods. One problem I have, I love to keep extra meals for friends and people at church who have family crisis, but I don't know when enough is enough.
just a simple dinner: I have been busy today making bon bons, as well as my typical Christmas cheese balls Well actually not so much cheese: one is corned beef and the other liverwurst. Dinner will be grilled pork chops smothered in mushrooms and peppers, sweet potatoes and cold slaw.
Baked cabbage and onions Assorted cheeses, fruit and crackers. Herring in sour cream. Assorted pickles.
A beer or wine. Coffee and another slice of stollen with Marzipan center.
