Sounds good but I'm just not a huge fan of blue cheese. I like a little of it when having buffalo chicken, but in a pasta sauce, I don't think I could handle it. I'd opt for parmigiana reggiano or romano in the sauce instead. Hope you enjoyed it!

Chick salad didn't work out last night, so tonight is chicken salad (chopped celery, dill pickle, toasted almonds, and mayo) on toasted wheat with iceberg lettuce leaves. Mustard potato salad as a side.

Tonight's dinner:

Baked Cod with a lemon-butter sauce
Zucchini and yellow squash cooked in stewed tomatoes
Fresh white grapes

A friend just dropped off a half-bushel of assorted citrus. It is late in the season but still very acceptable.

Unexpected chNGe to chicken in Chardonnay and cream with mushrooms last night.

How about mini meat loaves of pork and beef with mashed potatoes with horseradish, steamed cabbage for SO and grilled asparagus for me? May have time for mini pecan pies.

FYI - the pecan pie filling off the corn syrup bottle holds several days in the fridge. I freeze the dough already in muffin pans. Hot oven, a scoop of filling and the crust gets nice and flaky. Kitchen smells of labor of love

I am marinating a pork tenderloin in maple syrup, dijon mustard and minced garlic. I am going to grill it up tonight. I am making a big pot of collards to go with the pork.
Hope everyone has a great Saturday!

It is going to be a fun night tonight filled with board games and playing cards
Men are making the pepperoni/vegi pizzas tonight served with beer or wine and we ladies make the garden salad. For dessert cheese cake served with strawberries and whipping cream and mulled red wine.
Happy Easter everyone

I'm 1/2 ass getting ready for tomorrow so dinner is simple tonight: London Broil and I am actually doing it on top of the stove. I know, not the way to do any steak, but it is makes the least amount of mess and spoiled brat doesn't want to mess up the grill. He has it all ready for tomorrow. Think we will just have avocado, tomato salad with cottage cheese and I will saute some squash.
