I am making a curried chicken salad out of the leftovers from our roast chicken on Tuesday. I wil serve on a simple salad of arugula, romaine, grape tomatoes, and cucumbers.
Ugh. Is dinner time going to rear it's ugly head again?? I have no idea. And you know who is making noises like he wants ME to make a regular dinner today! I have NO idea where THAT'S coming from! I better disabuse him of THAT notion right quick! ;-)
Probably pork chops and mushroom gravy, mashed potatoes, and broccoli. Thanks, maggie2101 - you made that WAY easier than it could have been! Just took the chops out of the freezer - they'll be good to go by dinner time!
It's a leftovers night. I'm going to be serving the last of the Brazilian bean soup over leftover rice and will be making a spinach salad with red onion, bacon, hard boiled eggs and a balsamic dressing.
DH said Taco Thursday - w/ refried beans - for us that means premade- crispy shells, flour tortillas today he got premade tostada shells (doesn't like how I fry mine). I fry my own corn tortillas for tacos - I prefer a chewy to crunchy. All the fixings - gotta get an avocado or 2 - not sure if doing Spanish rice or not. I don't want it.
Lake Erie fried perch tacos wrapped in a soft tortilla, topped with shredded cabbage, chopped green onions, diced Roma tomatoes (the only decent ones I can find this time of year) and shredded pepper jack cheese. Slathered with a spicy Ranch tomato dressing.
Home make potato salad with chives and celery on the side and a good beer. Not sure which.
Blueberry cobbler for desert.
