Tonight was chick-fila. I had a bilateral nephrectomy 12 days ago that I'm recovering from and making homemade Chicken Parmesan for Fathers Day yesterday about did me in! But everyone's dinners have my mouth watering for real food. Keep'em comin'

Ham and cheese sandwiches on white bread with mayo and lettuce. Have tomatoes but they don't look good enough to me to use on a sandwich; would rather do without! BBQ potato chips and/or tomato soup.

Dinner started out as shrimp scampi, but somehow it became a spicy version of shrimp fried rice. Chocolate cake for dessert.

I am glad to hear that you are recovering from such a serious surgery. It didn't immediately sink in when I first read your post - but all best wishes to you my dear.

As much as I would much rather make a big pot of red sauce (your's sounds great Debsi) it's too hot and I am too lazy.
Instead it will be kraut dogs with carrot sticks. I am thinking ice cold root beer to drink.
Funny! Tonight I'm with you about too hot to cook: tuna salad sandwiches, carrot sticks, and potato chips.

As I am swimming in a mountain of produce ... I went ahead and made a pasta salad yesterday.

It was what I call a "free meal" as it consisted of pasta that I received free from Fry's Friday Freebies promotion months ago (Ronzoni Ancient Grains) and a generous portion of the vegetables I get on Saturdays in the 60# for $10 buys that I make.

By the way, the Ronzoni pasta was not very good. It is a new product meant to capture interest in ancient grains. It is another fad product that will eventually make it to the salvage bin.
