Looks like we are having roasted chicken quarters which I love: we will also avocado and tomato salad topped with cottage cheese and steamed or roasted broccoli. No carb tonight, I need to cut bake if possible.
For low carb, still sounds yummy!
Tonight we're having zucchini fritters with the first zukes I picked. I have TWO vegetable gardens going this year...my large one at my house, and a smaller one I planted at my daughter's with little grandson. "It's growin' Nanny, it's growin'!!!"
They have zillions of blackberry and raspberry bushes on their place, just starting to ripen...I had planned to bake a blackberry crumb pie for the July 4th weekend, but he ate the blackberries as fast as we picked them. I expected him to get a bellyache eating so many, but he didn't.

oh stop, making me hungry. I love all berries and yes we have done the zucchini fritters or cakes. they are good, but have no zucchini yet; did notice a couple of damn squash bugs last night. I am going to dust the plants this morning, hoping to control them.
Tonight our daughter and hubby are coming over for dinner; we won't see them on the 3rd or 4th. Spoiled brat is smoking a ham. We are having fresh green beans out of the garden. too bad it isn't our garden. I am making a big fruit salad and doing ramen noodles with cilantro, jalapenos, green onions, ginger and a little soy sauce, but I don't use the spice envelope that comes with the noodles. We will, of course, start with wine and a couple appetizers.

For the sauce, I'm gonna throw together something creamy -- but light and dairy-free -- with red and yellow bell pepper
Green salad
Can't be bothered to cook tonight (still suffering from a hangover from the night before)
Might just opt for baked beans on toast, with perhaps a few gratings of cheese and a BBQ sauce for a bit of spice on top
Ouch on the hangover. My son absolutely loves beans on toast. Got into after watching an episode of the Osbournes!
