Ugh! I can't believe I just posted this in the wrong thread!!! Typical!
We went to a family, the husband's, party in Ogunquit, ME today. So our late lunch/early dinner consisted of lobsters, chowder, corn on the cob, macaroni and potato salad too. My MIL made a dip with caramelized onions that was out of this world good!
Poor husband isn't feeling that hot today, so it will probably be early, and I know it will be simple. I think I'll take the meatloaf out (I made an extra the last time I did meatloaf, put it in a foil pan and froze it for down the road) bake that off, and give him nice big meatloaf sandwiches. He's not real into soup, BUT I found a can of his favorite Manhattan Clam Chowder in the pantry so I may surprise him with that, too. He's been working really hard around here lately - and I'm not appreciative enough - it's HIS turn today.
Tonight I am making fancy pants sandwiches. You take a baguette and slice it lengthwise. Spread a layer of pesto, sliced tomatoes, sliced fresh mozzarella, thinly sliced prosciutto and fresh basil. I am think of adding artichoke hearts but I am undecided right now. Wrap it up in foil and throw it in the oven long enough to heat it through.
