Basically it's pot roast (very basically - very VERY basically.) It comes from up by the shoulder I believe. There's a little diagram of a cow here that shows it. Or, the cow it came from's name was Charles. You decide which explanation is better - that's what I usually do.
I am sorry. I can feel your pain: I had total knee replacement about 18 months ago, and luckily no complications but no fun either. Our daughter just had back surgery Monday. We can all be thankful that medicine has come so far, but at the time when everything hurts you aren't thankful for much.

Gracious! Some of ya'll make me seem lazy! This time of year I HATE to heat up the house. SO...it will be a salad with some fajita seasoned chicken & a slice of zuchini bread (from local Mennonite bakery).
