TUESDAY: No cooking for me today. I think I over did it yesterday. My back is completely out. I'll be out of commission for at least 2-3 weeks. Ugh. I'm thankful DS lives with me. Time for another ice pack and my meds. I'll have him throw something together. Maybe grilled cheese and tomato soup.
Sorry to hear about your back. 2-3 weeks is a long to suffer with a back problem. Is there anything you can do to shorten the time?
I have some scallops in the freezer, so I think I'll make them escalloped with mayo, wine, butter, tarragon, parmesan and a few buttered crumbs. Salad on the side.
So its a wedge salad with blue cheese dressing, and white rice for him because he likes to put the scallop sauce on it.
So I just realized that everything Im making is white. DH hates white food. So, when I told him he said, "No, its good white food." Men are funny creatures.

LOL
Husband was shopping. Carrots were on the list. He brought home a huge 3 lb bag of carrots. Thinking of what I could do with so many of them, I asked him if he liked carrot salad. He looked at me and said, "I don't like carrots." Now, we've been together for 33 years. And he eats carrots, in different dishes, at least 3 times a week. I said, "Why haven't you ever said anything?" He said, "You keep putting them in front of me." (I still put carrots in soups and stews and roasts ... and he still eats them!) LOL
I'm going to do the pan fried cod and red beans and rice we didn't have last night.
Broiled chicken and a green salad here. Maybe ice cream later.
You guys missed all the great dinners I had while I was away - including some excellent trout and the most tender cake I've had in years! Mmmm and home made gnocchi with red sauce. Oh and the chocolate and coconut cream pies!

I have scoliosis. Never picked up as a kid. My right leg is shorter than the left. If I overdue anything or sneeze the wrong way, I am twisted completely to the right side and have awful back spasms. I have a pain mgt Doctor and I had a spinal fusion done. Meds and rest. I'm looking into a masseuse.

Sorry to hear of this my love
I've had back problems ( work related ) and I've used an osteopath, chiropractor, Thai massage, sports massage and acupuncture.
The first 2 are great for long term but the actual massages are great but not long term... You'll ache like mad after a Thai massage but you'll wake up feeling 7ft tall
This sounds awesome! I've never cooked meatloaf on a grill.
Very easy, just free form your meatloaf in a baking pan. Set the grill to indirect heat, place pan in middle of grill. Close grill and cook 45min to 1 hour depending on how big a meatloaf you make.
