We had beef smoked sausage (previously 1#, but now 10 oz. like we aren't supposed to notice, but it's ok since there are just 2 of us) and Mac n cheese.

Mexican tonight: roasted cauliflower tacos with all the regular toppings. Our seasoning of choice is Whole Foods' tequila lime rub. We love that stuff, and it's always sold out. Pro tip: go to the meat counter and tell them it's out of stock. The butcher usually has a big container of it and will fill a small bag for you at no charge. I can't remember the last time I actually paid for it. Toss the cauliflower florets with melted butter and the seasoning. Toss in a few unpeeled garlic cloves if you're so inclined. Pour the florets onto a roasting pan and put them in a 400 degree oven until slightly blackened at the tips. Wrap a few roasted florets in a corn tortilla and top with cheese (shredded cheddar or crumbled queso fresco, it's all good), sour cream, pico de gallo, and chopped avocado. Serve with refried or black beans sprinkled with chopped cilantro and more cheese. Yum!

My little niece came over and we made pancake cake sprinkled with icing sugar and plum sauce.With it we had cold milk.Not a healthy dinner but to see her smile from ear to ear was worth it I am stuffed
