As I've gotten older and am looking for more healthy egg breakfasts for weekends, I moved away first from pork sausage and bacon, to turkey sausage, and more recently, have moved to veggies. I like to saute' a fair amount of spinach or kale with minced garlic in a little olive oil and then add some beaten eggs - it's actually very tasty and provides good fiber and vitamins... works with fresh or frozen veg. If you can get them, old timey southern greens - like turnip, mustard and collard greens also saute' and taste real nice with garlic, olive oil and beaten eggs.

This morning it's going to be a glass of Lifeway lowfat strawberry kefir, which tastes kind of like a yogurt smoothie, but has awesome probiotic goodness.
