Wife had one egg fried (white firm and yolk runny) and one fried slice of ham. She dips her ham in the yolk. I had my egg, ham, cheese sandwich. Thin layer of mayo on both sides of the bread. Fry egg and place on bread. Light dusting of Cajun seasoning. Fry ham in same skillet and place on egg. Place slice of cheese on top for the sandwich. Can dress it up further with leafy greens, cliched onions, tomato slice, pickles, or whatever you enjoy. Make it a bit more flavorsble by toasting the bread and using butter on the toast instead of mayo. Another option is mustard on one slice and mayo on the other slice for a bit of spice.
