Sweet potato hash again. I think this is the new favorite for my family, but I've got to find a more efficient way to make it because it takes quite awhile to prepare on a busy morning. Maybe I'll try steaming the sweet potatoes ahead of time, so all I have to do is caramelize them in the cast iron skillet with the onions.

Our schmuffins version - Cranberry English muffins toasted and buttered with cooked egg, slice of ham and cheese, sprinkled with salt, pepper, oregano, and Mrs Dash spices. Glass of Simply orange juice and coffee.

Merry Christmas everyone!
Got up early to set and decorate the Christmas breakfast table. Poinsettia cotton tablecloth from the time I used to travel I buy things for the home. Imitation cranberry glasses, crystal glass dishes with different patterns.Christmas mugs. Double cocktail napkins champagne and red stars loosely folded at an angle standing upright in the glasses.
Lots of mini glass baubles of 1" strewn all over the table in between everything. Pillar candles in red and champagne.
Breakfast is coffee and tea. Christmas stollen. Assorted mini breads and variety butters. Butter, dill butter and sweet butter orange/vanilla. Fruit cups.Variety honeys. Mixed fruits juice. Family is having canadian bacon and fried eggs. Me a boiled egg.
You all have a lovely Christmas enjoy the day.

A large portion of oatmeal with cinnamon, sugar & nonfat milk together with a large mug of Jasmine Green tea with a teaspoon of honey & a sprinkling of cinnamon

Since I am out of commission with my knee I did not make the French toast casserole. My husband made me PB on toast on fresh toasted pumpernickel bread. He's making some bacon soon too.
