A few weeks ago, we went to a restaurant called First Watch, they are a small chain. One of the specials was Carbonara Benedict. It was delish, but the meat and sauce were a bit skimpy. So, with the help of some folks on an international cooking forum, figured out the meat was gammon, which is ham joint (or pork butt if you don't want that much or have facilities to hang it for a couple of months) cured like bacon then braised. So, I proceeded to cure up some gammon using boned pork butt, rinsed cure off after a little over a week, tied the butt into an even roast, then braised it. Cut it up into 5 pieces, froze 4 and kept 1 out. This morning, I sliced and toasted English muffins with butter, sliced the gammon and heated it up in a skillet, made Alfredo sauce using butter, heavy cream, Parm R, and a bit of nutmeg, and poached our eggs, 3 minutes for really runny for Dogboa and 4 minutes or so for my eggs. Fantastic breakfast.
