Christmas Eve lunch/dinner:
Slab of Steelhead, lightly marinated with a blend of thyme, rosemary, basil, white pepper and olive oil. Cook at level 7 to a light char.
The cooking pan with the rendered steelhead oil, is then used to carefully cook fresh brussels sprouts, 3 colors of petite coined carrots and turnips; 3:2:1 ratio. Cook over level 7 heat, vented cover and in the oil, to caramelize the sugars in the carrots and to light char on the brussels sprouts. Cook until oil and water is absorbed/evaporated. No seasoning needed.
Acorn squash microwaved till tender. Puncture flesh and season with dash of salt on each slice, a teaspoon of monk sugar and finally a drizzle of olive oil.
Peach juice for dessert.
